Desiccated Coconut is a grated, dried (3% moisture content max.), and unsweetened fresh meat or kernel of a mature fruit of coconut. Dessicated Coconuts are graded by their cutting size, for example, fine grade and medium grade where fine grade is smaller particle size than the medium grade.
The processes of desiccated coconut are as below:
One thousand nuts are expected to yield about 130kg of Desiccated Coconut. Production of Desiccated Coconut is hard work, as the removal of coconut husk, shell, and skin are all done manually or given the best of current technology are done semi-automatically.
How to identify a good quality Desiccated Coconut?
A good quality Desiccated Coconut should be white in color, reasonably free from yellow specks, black spots and other discolourations. It should have a sweet aroma of coconut, mild characteristic of coconut without rancid and an even particle size distribution.
Low Fat or high fat desiccated Coconut?
The value of Desiccated Coconut lies at the fat content. Desiccated Coconut is categorized into full fat (high fat) or reduced fat (low fat). A full fat Desiccated Coconut has a minimum of 60% fat, any lesser is a reduced fat Desiccated Coconut. Full fat Desiccated Coconut has higher monetary value than the reduced fat. In the past, coconut fat or coconut oil has been mistakenly believed for causing heart disease. Coconut oil is high in saturated fats, which have been taking the blame for problems caused by trans fats.
Packing and Storage of Desiccated Coconut
Desiccated Coconuts are packed in multi-ply kraft paper bags with inner sealed polythene to keep away from the atmosphere’s moisture. Desiccated Coconuts are packed in 10 kg, 25 kg or 50 kg. Desiccated Coconuts should be stored in a cool and dry place; avoiding direct sunlight and strong odors.

Extra-fine desiccated coconut
(90% of the weight shall pass through a sieve with a square aperture of .85mm, but of which 25% of the weight passes through a sieve of .50mm aperture size.)
Fine desiccated coconut
(80% of the weight shall pass through a sieve of square aperture size of 1.40mm but of which maximum 20% of the weight passes through a sieve of .71mm square aperture size.)
Medium desiccated coconut
(90% of the weight shall pass easily through a sieve of square aperture size of 2.80mm, but of which maximum 20% of the weight passes through a sieve of 1.40mm square aperture size.)

Shredded coconut pieces are smaller than flaked; they look like thin strands. A grater with holes and a rough edge is used to scrape the coconut , cutting long and thin strips of coconuts. Shredded coconut is available unsweetened and sweetened.
Unsweetened Shredded Coconut is mildly sweet and tender; made from fresh coconuts that are shredded, rinsed in filtered water, and slowly dried to perfection (without any added oils, sugar, or preservatives), each bite is packed with a pure nutty flavor.
Sweetened Shredded Coconut is made from fresh coconuts that are shredded, rinsed in filtered water, has sugar added and then dried; therefore tending to be a bit more moist from the outset, while unsweetened coconut is drier and slightly chewier.

Fresh coconuts are dehusked after harvest, cleaned, sorted by: size, weight, and maturity, packaged, palletized, and loaded into refrigerated ocean containers.
